This is my favorite soup and it’s also my own recipe. You can cook it on the stove or throw everything into a crock pot. It’s easy to make and is great if you want it to last for a few days. Enjoy!
- 2 chicken breasts
- 1 large onion
- minced garlic
- 8 bouillon cubes
- Large can corn
- 1 can rotel (mild, or hot)
- 1 can petit diced tomatoes
- small can tomato paste
- sour cream
- tortilla strips
- 2 tbs chili powder
- 1 tbs cumin
- cayenne pepper (dash, or more if desired)
- Shredded Cheese (I use a 4 cheese blend)
Heat large pot with bouillon cubes and 9-10 cups water. Dice onion and saute with olive oil and garlic. Once onions are grilled add to hot water. Add corn, tomatoes, tomato paste, and rotel. Once boiling, add raw chicken and spices. Chicken will cook in water.
After about 10 minutes, turn stove to med-high and cover. Set timer to 1 hour. With 30 minutes left, take out chicken and shred with a fork. Put chicken back to cook for the remainder of time.
When it’s done, turn off stove and let cool for 10-15 minutes. Serve in bowl. Add dollop of sour cream, sliced avocado, shredded cheese, and tortilla strips. Enjoy 🙂Like
